Scaling is no problem at all, typically the ambushes on the trade way do scale. It's more a question of consistency, you won't find gire giants roaming a little human sized dungeon a couple of hours away from Baldur's Gate. For ambushes you can stretch things and say those were roaming bandits/monsters, for dungeons not so much. Those guys generally live there for a reason !

Well, I’ll tell ya this, if one dungeon with scaling mobs good be introduced, I’d be happier than a happy clam.

Like, off the top of my head, what if the Undercity levels scaled?

one way to do it would be like the vault of the dead

have multiple floors to a dungeon but instead of the CR changing slightly have it change more; let the first floor be low level kobold followers who are visiting, the second floor mid level disciples who keep out most unwanteds and the third floor be your low epic guards that protect the leader, and fourth level be the boss and company
everyone is evil till proven otherwise
